Method
- Preheat oven to 400°F (200°C).
- Place tomatoes and garlic in baking dish, drizzle with olive oil, season.
- Roast 30–35 minutes until tomatoes burst and garlic softens.
- Cook pasta until al dente, reserve pasta water.
- Mash roasted garlic and tomatoes into sauce.
- Add pasta and reserved water, toss to coat.
- Stir in Parmesan and basil. Serve immediately.
Notes
For extra richness, add a splash of cream or burrata before serving.
