A simple yet flavorful pasta made with oven roasted cherry tomatoes, garlic, olive oil, and Parmesan cheese.

Ingredients
  

  • 12 oz pasta
  • 2 pints cherry tomatoes
  • 6 cloves garlic
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup pasta water reserved
  • 1/4 cup fresh basil torn

Equipment

  • Large pot
  • Baking sheet
  • Mixing bowl

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss tomatoes and garlic with olive oil and seasonings on a baking sheet.
  3. Roast for 25–30 minutes until caramelized.
  4. Cook pasta until al dente and reserve pasta water.
  5. Combine roasted mixture with pasta and reserved water.
  6. Stir in Parmesan and basil before serving.

Notes

For extra richness, add a spoonful of ricotta or a splash of cream.
