Ingredients
  

Salad
  • 12 oz short pasta rotini or penne
  • 2 cups cooked salmon flaked
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion finely chopped
  • 2 tbsp fresh dill chopped
Dressing
  • 0.5 cup Greek yogurt or mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 lemon zested and juiced
  • 1 clove garlic minced
  • salt and black pepper to taste

Equipment

  • Large pot
  • Mixing bowls
  • Colander
  • Whisk

Method
 

  1. Cook pasta in salted boiling water until al dente. Drain and cool.
  2. Prepare and flake cooked salmon, removing skin if needed.
  3. Whisk together yogurt or mayonnaise, olive oil, mustard, lemon zest, lemon juice, garlic, salt, and pepper.
  4. Toss cooled pasta with dressing until evenly coated.
  5. Gently fold in salmon, vegetables, and herbs.
  6. Chill for 30 minutes, then taste and adjust seasoning before serving.

Notes

For best texture, let all components cool before mixing.
