  • 1 lb smoked sausage sliced
  • 1 cup long-grain white rice uncooked
  • 1 onion chopped
  • 2 bell peppers diced
  • 2 cups chicken broth
  • 1 can diced tomatoes 14.5 oz

Equipment

  • Large skillet
  • Cutting board

  • Wooden spoon

Method
 

  1. Brown sausage in skillet and set aside.
  2. Sauté vegetables until softened.
  3. Add rice and seasonings, toast lightly.
  4. Pour in broth and tomatoes, return sausage.
  5. Cover and simmer until rice is tender.

Notes

For extra spice, use andouille sausage. Add cheese for a creamy twist.
