Ingredients
  

Gratin Base
  • 2.5 lbs Yukon Gold potatoes thinly sliced
  • 3 leeks sliced
  • 3 tbsp unsalted butter
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1.5 cups Gruyère cheese grated
  • 0.5 cup Parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Sauté leeks in butter until soft and fragrant.
  3. Warm cream and milk with seasoning.
  4. Layer potatoes, leeks, and cheese in the baking dish.
  5. Pour cream mixture over layers and top with Parmesan.
  6. Cover and bake 45 minutes, then uncover and bake until golden.
  7. Rest 10 minutes before serving.

Can be made ahead and reheated before serving.
