Ingredients
  

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 shallot finely minced
  • 1 clove garlic minced
  • 1.5 tsp black peppercorns coarsely crushed
  • 1 cup heavy cream
  • 1 tsp Dijon mustard
  • 0.25 tsp salt to taste

Method
 

  1. Heat butter and olive oil in a skillet over medium heat.
  2. Add shallot and cook until soft and translucent.
  3. Stir in garlic and cook until fragrant.
  4. Add crushed peppercorns and toast briefly.
  5. Pour in cream and stir to combine.
  6. Add Dijon mustard and salt, then simmer gently until thickened.
  7. Adjust seasoning and serve warm.
