- Brown beef in olive oil in a skillet over medium-high heat.
- Transfer beef to slow cooker.
- Sauté onion and garlic, then add to slow cooker.

- Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
- Remove bay leaves, adjust seasoning, and serve.
Notes
This soup thickens as it sits; add extra broth when reheating if desired.
