Ingredients
  

Soup Base
  • 1.5 lb beef chuck cubed
  • 1 cup pearl barley
  • 3 carrots sliced
  • 2 stalks celery chopped
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 6 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1 tsp thyme
  • salt and black pepper to taste

Method
 

  1. Brown beef in olive oil in a skillet over medium-high heat.
  2. Transfer beef to slow cooker.
  3. Sauté onion and garlic, then add to slow cooker.
  4. Add remaining ingredients and stir well.
  5. Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
  6. Remove bay leaves, adjust seasoning, and serve.

Notes

This soup thickens as it sits; add extra broth when reheating if desired.
