S’more Rolled Rice Krispie Treats

Ingredients
  

Base
  • 6 cups crispy rice cereal
  • 4 cups mini marshmallows
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
Filling
  • 1.5 cups semi-sweet chocolate chips
  • 1 cup crushed graham crackers
  • 0.5 cup mini marshmallows

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Line a baking sheet with parchment paper and lightly grease it.
  2. Melt butter over low heat, add marshmallows, and stir until smooth.
  3. Stir in vanilla and fold in cereal until coated.
  4. Press mixture into thin rectangle on parchment.
  5. Spread softened chocolate over warm cereal layer.
  6. Sprinkle graham crackers and extra marshmallows on top.
  7. Roll tightly into a log using parchment paper.
  8. Chill 20–30 minutes, slice, and serve.

Notes

Work quickly while marshmallow mixture is warm for easy rolling.
