Ingredients
  

Main Dough
  • 4 cups powdered sugar plus extra for dusting
  • 3 tbsp unsalted butter softened to room temperature
  • 3-4 tbsp heavy cream or evaporated milk
  • 1.5 tsp pure peppermint extract or ¼ - ½ tsp peppermint oil
  • 0.25 tsp pure vanilla extract optional
  • 1-2 drops red gel food coloring optional
  • 1 pinch fine sea salt

Method
 

  1. Prepare a work surface by laying out parchment paper and sifting a generous layer of powdered sugar onto it.
  2. In a mixing bowl, combine powdered sugar and softened butter. Mix on low speed until mixture resembles coarse sand.
  3. In a small bowl, stir together 3 tbsp cream, peppermint extract, vanilla (if using), and salt.
  4. With mixer on low, gradually pour the liquid into the sugar mixture. Mix until combined. Dough will be crumbly.
  5. Add remaining cream, one teaspoon at a time, until dough just comes together into a pliable, non-sticky ball.
  6. For colored mints, divide dough. Add food coloring to one portion and knead on sugared paper until uniform.
  7. Taking 1 tsp portions, roll dough into smooth balls. Place on parchment. Flatten with a fork for a pattern, if desired.
  8. Let mints dry uncovered at room temperature for 2-4 hours (or overnight) to form a slight skin. Store in an airtight container.

Notes

For a stronger peppermint flavor, use pure peppermint oil. If dough is sticky, knead in more powdered sugar. Mints soften and improve in texture after 24 hours in the container.
