Method
- Bring salted water to a boil and cook spaghetti until al dente.
- Reserve 1/4 cup pasta water, then drain pasta.
- Heat olive oil in a skillet and sauté garlic until fragrant.
- Add spinach and cook until wilted.
- Toss in spaghetti and reserved pasta water.
- Add Parmesan and lemon juice, tossing to combine.
- Season with salt and pepper, then serve immediately.
Notes
For extra richness, add a splash of cream or extra cheese. Best served fresh.
