Ingredients
  

Pasta
  • 12 oz spaghetti
  • 4 cups fresh spinach packed
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 0.5 tsp red pepper flakes optional
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp lemon juice fresh
  • 0.25 cup pasta water reserved

Equipment

  • Large pot
  • Skillet
  • Colander
  • Tongs

Method
 

  1. Bring salted water to a boil and cook spaghetti until al dente.
  2. Reserve 1/4 cup pasta water, then drain pasta.
  3. Heat olive oil in a skillet and sauté garlic until fragrant.
  4. Add spinach and cook until wilted.
  5. Toss in spaghetti and reserved pasta water.
  6. Add Parmesan and lemon juice, tossing to combine.
  7. Season with salt and pepper, then serve immediately.

Notes

For extra richness, add a splash of cream or extra cheese. Best served fresh.
