Ingredients
  

  • 12 cannelloni pasta tubes
  • 1 lb ground beef
  • 2 cups fresh spinach chopped
  • 1 cup ricotta cheese
  • 1 egg
  • 2 cups tomato sauce
  • 1.5 cups mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Sauté onion and garlic in olive oil until fragrant. Add beef and cook until browned.
  3. Wilt spinach, chop finely, and mix with beef, ricotta, egg, and Parmesan.
  4. Fill cannelloni tubes with the beef-spinach mixture.
  5. Spread tomato sauce in baking dish, arrange cannelloni, and cover with remaining sauce.
  6. Top with mozzarella and extra Parmesan.
  7. Cover with foil and bake 30 minutes. Uncover and bake 15 minutes until golden.
  8. Rest 10 minutes before serving.
