Method
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Sauté onion and garlic in olive oil until fragrant. Add beef and cook until browned.
- Wilt spinach, chop finely, and mix with beef, ricotta, egg, and Parmesan.
- Fill cannelloni tubes with the beef-spinach mixture.
- Spread tomato sauce in baking dish, arrange cannelloni, and cover with remaining sauce.
- Top with mozzarella and extra Parmesan.
- Cover with foil and bake 30 minutes. Uncover and bake 15 minutes until golden.
- Rest 10 minutes before serving.
