Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1 cup dried lentils rinsed
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 1.5 cups butter beans cooked, drained
  • 2 cups fresh spinach
  • 1 tbsp lemon juice

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic, cumin, and smoked paprika until fragrant.
  4. Add lentils, broth, and bay leaf. Bring to a simmer.
  5. Cover and cook until lentils are tender.
  6. Add butter beans and simmer 10 more minutes.
  7. Stir in spinach until wilted.
  8. Season with salt, pepper, and lemon juice before serving.

Notes

Soup thickens as it cools; add broth when reheating if needed.
