- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.

- Add lentils, broth, and bay leaf. Bring to a simmer.

- Add butter beans and simmer 10 more minutes.
- Stir in spinach until wilted.
- Season with salt, pepper, and lemon juice before serving.
