  • 2 tbsp olive oil
  • 8 oz mushrooms sliced
  • 4 cups fresh spinach
  • 2 cloves garlic minced
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add mushrooms in a single layer and cook until browned.
  3. Stir and continue cooking until golden and tender.
  4. Add garlic and cook briefly until fragrant.
  5. Add spinach in batches, letting it wilt.
  6. Season with salt, pepper, and red pepper flakes.
  7. Cook until excess moisture evaporates and serve hot.

Notes

Serve as a side or main dish. Add lemon or cheese if desired.
