- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, strawberry cake mix, baking powder, and salt.
- Cream butter and sugar until light and fluffy. Add egg and vanilla extract.
- Mix in dry ingredients until a soft dough forms.
- Roll dough into balls and coat in pink sanding sugar.
- Bake 9–11 minutes until set and lightly crackled.
- Press a chocolate kiss into each cookie while warm.
- Cool on wire racks before serving.
