Ingredients
  

Buttery Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter softened
  • 0.25 cup granulated sugar
  • 0.25 tsp salt
Sweet Potato Filling
  • 2 cups mashed sweet potatoes cooked and cooled
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 0.5 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp salt

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking pan with parchment paper.
  2. Mix crust ingredients until crumbly, then press firmly into pan.
  3. Bake crust 12–15 minutes until lightly golden.
  4. Whisk sweet potato filling ingredients until smooth.
  5. Pour filling over crust and smooth top.
  6. Bake 30–35 minutes until center is set.
  7. Cool completely, then chill before slicing into bars.

Notes

Chilling improves texture and flavor before slicing.
