Ingredients
  

Salsa
  • 1 pound fresh strawberries hulled and finely diced
  • 1-2 jalapeño peppers finely diced (seeds/ribs removed to control heat)
  • 0.5 medium red onion finely diced
  • 0.33 cup fresh cilantro leaves chopped
  • 1 large lime zest and juice (about 2 tbsp juice)
  • 1 tbsp honey or agave syrup optional
  • 0.5 tsp fine sea salt plus more to taste
  • 0.25 tsp freshly ground black pepper

Method
 

  1. Prepare all produce: Finely dice the strawberries, jalapeño (seeds/ribs removed for milder heat), and red onion. Chop the cilantro.
  2. In a medium bowl, gently combine the diced strawberries, jalapeño, red onion, and chopped cilantro.
  3. In a small bowl, whisk together the lime zest, lime juice, honey (if using), salt, and black pepper.
  4. Pour the lime dressing over the strawberry mixture. Fold everything together gently until well combined.
  5. Let the salsa rest at room temperature for 15-30 minutes to allow the flavors to meld and the juices to release.
  6. Taste and adjust seasoning, adding more salt, lime, or honey as needed.
  7. Serve immediately with tortilla chips, on grilled meats, or as desired. For best quality, enjoy within a few hours.

Notes

Storage: Store in an airtight container in the refrigerator for up to 24 hours. It will become more juicy. For a variation, try adding diced avocado or cucumber just before serving.
