- Prepare all produce: Finely dice the strawberries, jalapeño (seeds/ribs removed for milder heat), and red onion. Chop the cilantro.
- In a medium bowl, gently combine the diced strawberries, jalapeño, red onion, and chopped cilantro.
- In a small bowl, whisk together the lime zest, lime juice, honey (if using), salt, and black pepper.
- Pour the lime dressing over the strawberry mixture. Fold everything together gently until well combined.
- Let the salsa rest at room temperature for 15-30 minutes to allow the flavors to meld and the juices to release.
- Taste and adjust seasoning, adding more salt, lime, or honey as needed.
- Serve immediately with tortilla chips, on grilled meats, or as desired. For best quality, enjoy within a few hours.
Notes
Storage: Store in an airtight container in the refrigerator for up to 24 hours. It will become more juicy. For a variation, try adding diced avocado or cucumber just before serving.
