  • 2 cups cucumber thinly sliced
  • 2 tbsp fresh mint chopped
Dressing
  • 2 tbsp lime juice fresh
  • 1 tbsp olive oil
  • 1 tsp honey optional
  • 0.25 tsp salt to taste

Method
 

  1. Cut pineapple into bite-sized chunks and slice cucumbers thinly.
  2. Add pineapple and cucumber to a large mixing bowl.
  3. Whisk lime juice, olive oil, honey, and salt in a small bowl.
  4. Pour dressing over the salad and toss gently.
  5. Fold in chopped mint and adjust seasoning to taste.
