Ingredients
  

Flapjack Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 tbsp granulated sugar
  • 1 cup mango purée
  • 1 cup fresh mango diced
  • 2 eggs large
  • 1 cup milk
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract

Method
 

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  2. In another bowl, mix mango purée, eggs, milk, melted butter, and vanilla until smooth.
  3. Combine wet and dry ingredients gently until just mixed.
  4. Fold in diced mango carefully.
  5. Heat a greased skillet over medium heat.
  6. Pour batter onto skillet and cook until bubbles form, then flip.
  7. Cook until golden and fluffy. Serve warm.

Notes

Use ripe mango for the best flavor and sweetness.
