Ingredients
  

Turkey Meatballs
  • 1 lb ground turkey
  • 0.5 cup breadcrumbs
  • 1 egg large
  • 2 cloves garlic minced
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
Pumpkin Sauce
  • 1 cup pumpkin puree
  • 1 cup chicken broth
  • 0.5 cup onion diced
  • 0.25 cup heavy cream

Method
 

  1. Mix all meatball ingredients in a bowl until just combined.
  2. Form mixture into evenly sized meatballs.
  3. Brown meatballs in a skillet with olive oil, then remove.
  4. Sauté onion and garlic in the same skillet.
  5. Add pumpkin puree and chicken broth, stirring until smooth.
  6. Stir in cream and season to taste.
  7. Return meatballs to sauce and simmer until cooked through.

Notes

Serve over pasta, rice, or mashed potatoes for a complete meal.
