Ingredients
  

Salad
  • 3 cups elbow macaroni uncooked
  • 2 cups sharp cheddar cheese shredded or cubed
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1 cup celery finely diced
  • 0.75 cup red bell pepper diced
  • 0.5 cup red onion finely chopped
  • 2 tbsp fresh parsley chopped
  • salt to taste
  • black pepper to taste

Method
 

  1. Cook macaroni in salted boiling water until al dente. Drain and rinse under cold water.
  2. Whisk mayonnaise, sour cream, mustard, vinegar, sugar, salt, and pepper.
  3. Combine pasta with dressing and mix thoroughly.
  4. Fold in cheddar, celery, bell pepper, onion, and parsley.
  5. Refrigerate for at least 1 hour before serving.

Notes

For best flavor, chill 2–4 hours before serving.
