Ingredients
  

Filling
  • 2 cups cooked lobster meat chopped
  • 3 tbsp unsalted butter
  • 1 cup onion diced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 3 tbsp all-purpose flour
  • 1.5 cups seafood stock
  • 1 cup heavy cream
Crust
  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter cold, cubed

Method
 

  1. Prepare pie dough and chill for 30 minutes.
  2. Sauté vegetables in butter until softened.
  3. Stir in flour, then whisk in stock and cream until thickened.

  5. Assemble pie with filling and crust.
  6. Bake at 375°F until golden and bubbling.
