Ingredients
  

  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 10 oz mushrooms sliced
  • 1 cup dry lentils rinsed
  • 4 cups vegetable broth

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Cook onion until soft, then add garlic, carrots, and celery.
  3. Add mushrooms and cook until browned.
  4. Stir in spices, lentils, broth, and tomatoes.
  5. Simmer until lentils are tender. Serve warm.

Notes

Stew thickens as it rests; add broth when reheating.
