Method
- Wash and zest oranges; juice until you have 2 cups of fresh orange juice.
- Combine orange juice, maple syrup, orange zest, and a pinch of salt in a saucepan.
- Sprinkle agar‑agar powder over the mixture and let hydrate for a few minutes.
- Heat mixture over medium heat, whisking constantly; bring to a boil then simmer until agar dissolves.
- Whisk together coconut milk, vegan yogurt, vanilla extract, and maple syrup in a small bowl.
- Pour a thin layer of the hot orange mixture into molds; let set slightly.
- Add dollops of the creamy mixture on top and swirl gently with a toothpick.
- Fill the rest of the molds with orange mixture and allow to set at room temperature.
- Refrigerate for at least 1 hour until fully firm; unmold and serve.
