  • 500 g ground pork
  • 3 tbsp brown sugar
  • 3 tbsp fish sauce
  • 1 tbsp soy sauce
  • 3 cloves garlic minced
  • 1 shallot finely chopped
  • 1 tsp black pepper freshly cracked
  • 2 tbsp vegetable oil
  • 1 red chili sliced (optional)

Equipment

  • Large skillet or wok
  • Wooden spoon

Method
 

  1. Heat oil in skillet and caramelize brown sugar until amber.
  2. Add water carefully to stop caramelization.
  3. Add garlic and shallots; sauté until fragrant.
  4. Add ground pork and cook until browned.
  5. Stir in fish sauce, soy sauce, and black pepper.
  6. Cook until sauce thickens and coats pork.
  7. Garnish and serve over rice.

Notes

Watch caramel carefully to prevent burning. Adjust fish sauce to taste.
