Chia Pudding Base
  • 0.5 cup chia seeds
  • 2 cups coconut milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
Toppings
  • 1 cup fresh raspberries
  • 2 tbsp shredded coconut

Method
 

  1. Whisk coconut milk, maple syrup, and vanilla extract.
  2. Stir in chia seeds and whisk again after 5 minutes.
  3. Refrigerate 3–4 hours or overnight until thick.
  4. Mash raspberries lightly.
  5. Layer pudding and raspberries in jars.
  6. Top with shredded coconut and serve chilled.
