Ingredients
  

Raspberry Layer
  • 2 cups raspberries fresh or frozen
  • 0.25 cup granulated sugar
  • 1 tbsp lemon juice
Cream Layer
  • 8 oz mascarpone cheese cold
  • 1 cup heavy whipping cream cold
  • 6 oz white chocolate melted
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
Assembly
  • 1 package ladyfinger cookies

Method
 

  1. Cook raspberries with sugar and lemon juice until slightly thickened. Cool completely.
  2. Melt white chocolate and let cool slightly.
  3. Whip cream to soft peaks.
  4. Mix mascarpone, powdered sugar, vanilla, and white chocolate until smooth.
  5. Fold whipped cream into mascarpone mixture gently.
  6. Dip ladyfingers briefly into milk or syrup.
  7. Layer ladyfingers, cream, and raspberry sauce in dish.
  8. Chill at least 4 hours before serving.

Notes

For best texture and flavor, chill overnight before serving.
