Ingredients
  

Raspberry Layer
  • 0.5 cup raspberry jam
  • 1.5 cups fresh raspberries
Cream Filling
  • 8 oz white chocolate melted
  • 1 cup heavy whipping cream
  • 16 oz mascarpone cheese room temperature
  • 0.5 cup granulated sugar
  • 1 tsp vanilla extract
Assembly
  • 24-30 ladyfingers
  • 1 cup brewed coffee cooled

Method
 

  1. Warm raspberry jam and mash with fresh raspberries. Cool.
  2. Melt white chocolate and let cool slightly.
  3. Whip heavy cream with powdered sugar to soft peaks.
  4. Beat mascarpone with sugar and vanilla, fold in white chocolate and whipped cream.
  5. Dip ladyfingers briefly in coffee.
  6. Layer ladyfingers, raspberry mixture, and cream. Repeat.
  7. Chill at least 4 hours before serving.

Notes

Chill overnight for best texture and flavor development.
