Method
- Preheat oven to 475°F (245°C). Place a pizza stone in the oven if using.
- Let the pizza dough rest at room temperature for 20 minutes.
- Mix olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper in a small bowl.
- Stretch the dough into a 12-inch circle on a floured surface.
- Brush the lemon garlic oil evenly over the dough, leaving a small crust edge.
- Add ricotta in dollops (optional), then layer mozzarella evenly.
- Sprinkle basil, parsley, thyme, and red pepper flakes (optional) over the cheese.
- Bake for 10–12 minutes until crust is golden and cheese is melted.
- Remove from oven, add extra lemon zest, olive oil drizzle, and Parmesan if using.
- Slice and serve immediately, garnished with fresh herbs.
Notes
For best flavor, use fresh lemon zest and fresh mozzarella. Add herbs after baking for maximum freshness.
