Method
- Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment paper.
- Cream butter and sugar until light and fluffy. Mix in flour and salt to form crust.
- Press crust evenly into pan. Bake 15–18 minutes until lightly golden. Cool slightly.
- Whisk eggs and sugar until smooth. Stir in flour, lime juice, and zest.
- Pour filling over crust. Bake 20–25 minutes until set but slightly wobbly in center.
- Cool completely, then chill at least 2 hours. Lift from pan and slice into squares.
- Dust with powdered sugar before serving.
Notes
Ensure fresh lime juice for the best tang. Chill for clean cuts.
