Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt
Filling
  • 4 eggs large
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup fresh lime juice
  • 1 tbsp lime zest
  • powdered sugar for dusting

Equipment

  • Baking pan
  • Wire rack
  • Whisk or hand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment paper.
  2. Cream butter and sugar until light and fluffy. Mix in flour and salt to form crust.
  3. Press crust evenly into pan. Bake 15–18 minutes until lightly golden. Cool slightly.
  4. Whisk eggs and sugar until smooth. Stir in flour, lime juice, and zest.
  5. Pour filling over crust. Bake 20–25 minutes until set but slightly wobbly in center.
  6. Cool completely, then chill at least 2 hours. Lift from pan and slice into squares.
  7. Dust with powdered sugar before serving.

Notes

Ensure fresh lime juice for the best tang. Chill for clean cuts.
